Bacteria exposed to the same active ingredient for long periods build up tolerance, so a sanitizer that passed swab tests in January can start failing them by winter. Cernol’s standing recommendation is to run a QAC sanitizer such as Tetramine 2008 for six months, then switch to a chlorine sanitizer such as Sypo or a hydrogen-peroxide type such as Hydrosan for the next six. Because all three chemistries come out of the same Windhoek factory, the rotation does not require a new supplier, new dosing equipment or new paperwork — we simply switch the product on your standing order.
A QAC (quaternary ammonium compound) sanitizer such as Tetramine 2008 is non-corrosive, low-odour and keeps working on surfaces after they dry, which makes it comfortable for daily food-contact sanitizing. A chlorine sanitizer such as Sypo is faster-acting and cheaper per litre, but it is more aggressive on soft metals and must be rinsed correctly. Most Namibian food plants use both across the year as part of the six-month rotation, and we will tell you plainly which one suits each surface in your plant.
