What are the three steps in dairy cleaning?

Step 1 is an alkaline product — PSP Powder or Klenz 12 — which strips fat and protein from lines, tanks and surfaces. Step 2 is the acid step — Acidet on stainless equipment, or Hydrosan as a peroxide-based acid sanitizing rinse — which dissolves the mineral film (milkstone) the alkaline step cannot touch. Step 3 is the sanitizer — Sypo or Tetramine 2008 — which kills what remains before production. Skipping the acid step is the most common audit failure in small Namibian dairies: milkstone builds invisibly and harbours bacteria under a surface that looks clean.

Why must the sanitizer be changed every six months?

Because the plant’s resident bacteria adapt to a single active ingredient. Cernol’s standing instruction to dairies and butcheries is: run a QAC sanitizer for six months, then switch to a chlorine sanitizer or a hydrogen-peroxide sanitizer for the next six, and keep alternating. All the rotation partners — Tetramine 2008 (QAC), Sypo (chlorine), Hydrosan (peroxide) — are blended at our Windhoek factory, so the swab results stay clean without changing supplier, dosing pumps or delivery schedule.

What does Cernol supply for butcheries and meat plants specifically?

The butchery set is: Chlordet 110 for floors and equipment washing (chlorinated, so it cleans and sanitizes in one pass), Pansolv for pots, pans and racks at 50 °C plus, Smokehouse Cleaner for baked-on smokehouse deposits, Arrest as the butchery degreaser, Robust for high-foam scrubbing of racks and surfaces, and Sypo or Tetramine 2008 as the rotating sanitizer.
